
Pork belly sandwich with BBQ sauce
Ingredients
4 pork belly pieces
SMP Rub Rojo
Bread of your choice
1 L coke soda
For the BBQ sauce
2 cups of ketchup
1/2 cup pineapple juice
1 tbsp soy sauce
1 tbsp Worcestershire sauce
2 tbsp mustard
¼ cup bourbon
3 tbsp agave honey
For the coleslaw
3 cups cabbage
1 chive
1 shredded carrot
½ cup apple cider vinegar
¼ cup sugar
2 cups chopped cilantro
½ tsp cumin
Directions
Season the pork belly with SMP Rub Rojo to taste.
Place the pork belly in a foil platter and pour the soda.
Place the platter with the pork belly in the smoker for 4 hours at 250° F.
For the BBQ sauce:
Pour all the ingredients in a bowl and mix until fully combined.
For the coleslaw:
Mix all the ingredients very well.
Make the salad at least 2 hours in advance and refrigerate.
For the sandwich
After 4 hours, remove the pork belly from the smoker and let it rest for 30 minutes.
Cut in slices and add BBQ sauce to make it moist.
Heat the bread of your choice.
Add the meat and BBQ sauce to the bread.
