
Rib eye cracklings in guacamole
Ingredients
For the cracklings
- 4 rib eye pieces of 1” thick
- 3 kg beef fat
- SMP Applewood Smoked Sea Salt
- 3 L vegetable oil
- Avocado salsa and green tomato
For the salsa:
- 10 green tomatoes
- 4 to 6 serrano chiles
- ½ red onion
- 4 avocados
- ½ cilantro bunch
- SMP Applewood Smoked Sea Salt
Directions
For the salsa
In a blender or a mortar, crush the tomatoes, serrano chiles and an avocado.
Pour the salsa in a bowl and add the diced onion and avocados.
Integrate very well, season with SMP Applewood Smoked Sea Salt. Finish with chopped cilantro.
For the cracklings
In a deep plow disc cooker pour the oil and preheat to 330° F and add the beef fat until it releases all of its fat.
Dice the rib eye in half inch by half inch cubes.
After about 30 minutes since the beef fat released its fat, remove the solid fat with a strainer and leave the liquid fat in the plow disc cooker.
Add the rib eye dices to the disc until golden and crunchy on the outside. This will take around 20 minutes.
Add Applewood Smoked Sea Salt immediately after taking out the rib eye.
Add salsa to the rib eye cracklings. You can also add pickled red onion.
